It was sixty-eight degrees out, and a wall of gray clouds covered the sky in the Pacific Northwest. We’d driven a long way and I felt restless. I looked over at Aubrey. She was lost in watching the pine-covered mountains and meandering creeks that run parallel to this stretch of highway between Portland and Newport.
Sometimes, you’re lucky enough to catch a few fish by hand. Tasmania is known for its Flathead. My brothers and I used to catch them and eat them all summer long, and they’re still one of my favorite fish to eat. I love the simplicity of this recipe.
On one of our first dates, Jon taught me to surf—and then he made simple rockfish tacos. Just tortillas, fish and salsa. And maybe I was just coming off the high of my first time standing on a wave, but those tacos were delicious.
Pasta is a staple in RV life, it’s safe to say. I think it’s the comfort of knowing you always have something to whip up if you happen to travel an extra day. I’ve discovered jumbo pasta shells, and love stuffing them and turning them into a cheesy mess of deliciousness.
Scallop season is such a highlight in the year for me. I often dive for them or enjoy them from the local seafood market. The cool thing about this recipe is you can always switch out the scallops for another favorite, even fish. It’s a great way to create memories on the road.
Cookies are my favorite thing to eat. I mean bake. Everyone has their favorite kind and they either like them flat and a little crunchy or soft but thick and chewy. I’ve been known to trash an entire batch of flat crunchy cookies, so you know where I stand!
As the sun sets, I love cooking dinner and reflecting on the day’s adventure. I can’t pass up a delicious steak on my road trip, and it's always nice to spoil yourself. Tomahawk steak is the perfect way to do this. It’s so fun to cook and share.
